Cranberry Muffins


1 egg
1/3 cup sugar
1 tbsp baking powder
1 cup milk (skim is fine)
1/4 cup melted butter (or other shortening of choice)
2 3/4 cup all-purpose flour
1/2 tsp salt
1 cup dried cranberries


  1. Preheat oven to 350.
  2. Beat egg, then stir in melted butter and milk.
  3. Sift flour, sugar, baking powder and salt into a large bowl. Stir cranberries into flour mixture.
  4. Stir egg mixture into flour mixture just until moistened - not too much, lumpy is fine!
  5. Fill greased muffin cups 2/3 full
  6. Bake for about 30 minutes or until they are lightly browned and do not 'give' when tested. Don't overcook!

Makes a dozen and most other fruits will work just fine: raspberries, blueberries, chopped apple, raisins...
