Vegan Pecan Sweet Potato Cakes

Ingredients

1 medium yam
2 Tablespoons Extra Virgin Olive oil
1/2 onion diced
1 stalk celery diced
1-2 cloves garlic
1 Tablespoons cumin
2 Tablespoons flour
1/2 cup finely crushed pecans
1/4 cup chopped pecans
1/2 teaspoon salt
pepper optional

Directions

  1. Steam or bake yam until soft.
  2. Sautee onions, celery & garlic in olive oil. Add cumin & sautee to combine with veggies.
  3. Grind & chop pecans.
  4. In a bowl, combine yam, veggies, flour, pecans & salt & pepper. Mash with a fork.
  5. Separate into 4 patties and place on an oiled baking tray and bake at 350 about 25 minutes (or you can fry them).
